Sustainability, a trend has been growing for some years, has now become a real must for the entire Ho.re.ca sector. Indeed, the catering and cold industry wasted no time in adapting and anticipating the all-around evolution of the concept. All combined with innovation and hygiene, that are confirmed as some of the trends that will mark the future of catering for many Italian and international business group that will take part in HostMilano. The global situation has prompted greater reflection, from both the players in the supply chain and consumers, towards ethical principles. Customers are increasingly attentive to the origin of ingredients and prefer organic, national and zero- km products, which are perceived as elements of reassurance. In addition, based on the testimonies collected by HostMilano, catering is already embracing the Circular Economy system. This model is declined, besides in a strict selection of references, also in the design of the layout and of the equipment with low energy consumption and made of durable, recycled or completely recyclable materials, according to the principle of the 3 Rs: Reduce – Reuse – Recycle.

Between the novelties exhibited at HostMilano, custom-made refrigerated counters specific for chocolate and haute patisserie, designed according to the dictates of the so-called “Zero project”, that is, the policy aimed at guaranteeing 80% reduction in products maintenance and refrigerated showcases for the display. Plus, new refrigerated display cabinets for displaying desserts, that combine design and functionality. The aim is to design and realise equipment capable of guaranteeing high energy efficiency, up to zero environmental impact. On display also cold cells for the best preservation of ingredients, all thanks to the use of an innovative antibacterial system with silver ions for total protection, 24 hours a day, 7 days a week, and permanent for its entire service life.
Innovation and design: from artificial intelligence in large-scale distribution to the aesthetics of the new cold rooms
Glass, eco-friendly materials and an ultramodern design. The field of cooling, also thanks to consumers new needs and to the evolution of the out-of-home spaces, is going through a change and throughout Europe it becomes the protagonist of a revolution in spaces, not only those belonging to restaurants and bars, but also to large-scale distribution. In recent times, people had already become accustomed in supermarkets to a greater use of technology in order to facilitate purchases, but after the pandemic, this trend will accelerate further. Artificial intelligence will replace payment transactions, will allow to order and collect products without queues and suggest which goods to buy. On the innovation front, the next goal is developing more eco-sustainable cold equipment, as well as more ecological distribution solutions dedicated to the large-scale distribution, characterised by extended glass surfaces aimed at making the product more appealing and recognizable and drastically reduce consumption.
Also the world of catering is focusing decisively on technology and aesthetics. The cold rooms of the future will be characterized by a design capable of harmonizing with the surrounding space; whether it is a room or an open kitchen, thanks to particular colours or the presence of glazed spaces, the result will always be good to see. In this way, the restaurateur will be able to show off all the freshness of the raw materials, giving the customers the possibility to choose what will be cooked directly by taking a look inside the refrigerator cabinet.
