Like an expert pizzaiolo
OperaPrima was designed with a precise idea in mind: to replicate the hands of an experienced pizzaiolo, so that it can also be used by a beginner. Thanks to its patented cold-working technology, the dough is opened gently and does not lose its organoleptic characteristics.
After setting the opening diameter and edge size and spreading the dough in the light disc, OperaPrima takes about 20 seconds to open (i.e. something like 200 pizzas in an hour): the result is an artisanal pizza with a well-defined edge. While OperaPrima is in action, the pizzaiolo can follow other activities, such as seasoning the pizzas, checking the cooking, arranging the ingredients, or preparing new doughs.

“Is it easy to use?” This is one of the questions we are often asked during the numerous demos held in the dedicated pizza area at Ecor International’s facilities.
The answer is that OperaPrima is designed to be easy to use. Indeed, it takes very little to gain confidence, especially for a pizzaiolo with no experience.
It may take some practice to set up, but the display is also very intuitive and easy to use so the machine works for you while you are performing other tasks.

Now, together with OperaPrima, it is also possible to buy frozen doughs to save time and raw materials, without sacrificing pizza quality and fragrance.
These doughs are specially made to allow all pizza makers to make the typical Italian pizza: classic, Neapolitan or Roman.
OperaPrima’s rolls are available in four variants to meet the needs of every lover of the traditional Italian dish: classic, wholemeal, organic and kamut.
The doughs are hibernated to avoid interrupting fermentation, which is only paused allowing the yeast contained in the dough not to die when the storage temperature (-20°C.) is reached, but to go into standby and resume leavening with vitality once the balls reach the temperature for use.
The individual packaging does not alter the originality of the fresh dough, so the pizza dough retains its characteristic flavour profile and responds to automatic handling, just like fresh dough.
