High-pressure processing (HPP) is a non-thermal preservation technology that applies high-hydrostatic pressure (up to 6,000 bar /87,000 psi) for some seconds or minutes in packaged food. It reduces several logs of spoiling microorganisms and pathogens (E. coli, Listeria spp., Vibrio spp.,…) guaranteeing food safety and extending shelf-life of products between 2 and 4 times.
However, extending the shelf-lives often affects the quality of the product. Fortunately, HPP preserves nutritional and organoleptic properties, thus being extremely easy to implement and allowing SME to go into retail or export without need of complex R&D processes or undesired preservatives and additives.
