High-pressure processing (HPP) is a non-thermal preservation technology that applies high-hydrostatic pressure (up to 6,000 bar /87,000 psi) for some seconds or minutes in packaged food. It reduces several logs of spoiling microorganisms and pathogens (E. coli, Listeria spp., Vibrio spp.,…) guaranteeing food safety and extending shelf-life of products between 2 and 4 times.
However, extending the shelf-lives often affects the quality of the product. Fortunately, HPP preserves nutritional and organoleptic properties, thus being extremely easy to implement and allowing SME to go into retail or export without need of complex R&D processes or undesired preservatives and additives.
Hiperbaric, the leading supplier of HPP technology, points that thanks to the benefits and technological specifics, it has become an essential tool for companies worldwide that have invested in it or have booked a specific tolling service. The advantages of HPP tolling, are:
- No Capital Investment. Instead of investing capital initially, companies can adopt the technology by paying a service fee, usually on a per-pound basis. This allows flexibility for seasonal products, and the introduction of new products and new markets.
- More competitive retail prices. Using facilities and processes of a toller, companies reduce associated production costs.
- New “export” alternatives. Booking HPP tolling services in the destination country allows stint on tax and customs costs, among others.
- Greater safety in innovation processes. The development of products in collaboration with a toller offers the opportunity to modify recipes and probe the consumer with affordable costs, guaranteeing food safety and a higher success rate in the launch of the final product.
Webinar: HPP Tolling – Technology Accessible to All Companies
Aware of the interest that technology arouses, especially in times of COVID, Hiperbaric hold on September 24 a new webinar aimed at making known HPP tolling.
With a hybrid presentation and round table format, the attendees not only will learn about high-pressure processing (benefits for the consumer, equipment, challenges and opportunities, trends,…) or tolling services (advantages for companies, global HPP tolling network, case studies,…), but they will be able to ask their doubts live to several HPP tollers and also to Hiperbaric specialists.
